Orzo Pasta Salad

For those end of summer BBQ’s or year-round house parties –
 
Cook 1 box Orzo Pasta, drain and let it cool off. Once cooled, add in:
1 can red kidney beans
1 can small black olives
1 red onion (chopped)
Carrots and Celery (chopped)
Cheese, chopped in small squares ( I used Sharp Cheddar but you can add any kind you like)
2 tbsp Olive Oil
1-2 tbsp Balsamic Vinegar
 
Mix well! Other ingredients you may wish to add: pepperoni, artichokes, green pepper, tomatoes
 
*Just a tip – add a bit of salad dressing before serving (not more than a couple tablespoons. Italian, Greek or a Vinegarette work well)
